📝 Ingredients

  • 1 ½ cups unsweetened coconut yogurt

  • 2 medium bananas, frozen and cut into chunks

  • 1 cup raw spinach

  • ½ medium avocado

  • ¼ cup raw honey (or sub maple syrup for vegan)

  • ¾ tsp pure almond extract

  • 4 tbsp shelled raw pistachios, divided (2 tbsp for blending, 2 tbsp crushed for topping)

  • 1 scoop Pure Vanilla Superfood Protein

🍳 Instructions

  1. Blend it up:
    In a high-speed blender or food processor, blend coconut yogurt, frozen banana, spinach, avocado, honey, almond extract, protein, and 2 tablespoons of pistachios. Blend until thick, smooth, and creamy.

  2. Prep the pan:
    Line a loaf pan with parchment paper and pour the blended mixture into the pan. Smooth the top with a spatula.

  3. Add toppings:
    Sprinkle the remaining 2 tablespoons of crushed pistachios on top for crunch and flavor.

  4. Optional – Use an ice cream maker:
    If you have an ice cream maker, pour the mixture in and churn according to manufacturer’s instructions.

  5. Freeze:
    Place the loaf pan in the freezer and freeze for 3–4 hours, or until firm enough to scoop.

  6. Scoop & enjoy:
    Serve with your favorite toppings or enjoy it as is for a cool, clean treat!
