2 cups whole-wheat flour
½ cup sugar
1 tbsp baking powder
½ tsp baking soda
½ tsp iodized salt
½ tsp cinnamon
¼ tsp nutmeg
1 (15 oz) can pumpkin
½ cup raisins
1 scoopĀ Vanilla Superfood Protein
Preheat oven to 375°F (191°C).
In a large bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, protein, and nutmeg.
Add pumpkin, ½ cup water, and raisins. Stir until just combined ā donāt overmix!
Spoon batter into lined muffin cups, filling to just below the tops.
Bake 25ā30 minutes, until muffin tops spring back when lightly pressed.
Let stand 5 minutes, then transfer to a rack to cool completely.
