What You'll Need

  • 1 ½ Cups fresh pineapple chunks
  • 1 Cup unsweetened vanilla coconut yogurt
  • ¾ Cup canned light coconut milk
  • 1 Scoop Superfood Protein Smoothie Vanilla Crème
  • 10 Fresh mint leaves
  • Zipzicle® pouches (available at www.zipzicles.com)

What could be more rejuvenating after a tough workout during the heat of summer than the three P’s: Pineapple, Plant Based Protein and Popsicles? With a splash of light coconut milk and some fresh mint, this frozen treat is full of hydrating and energizing ingredients. We poured our Superfood Protein Smoothie recipe into these clever Zipzicles pouches so we could eat them on a bike and we could eat them on a hike.

Directions

In a blender or food processor, put all the ingredients in and blend on high speed until well combined.

Pour into Zipzicles freezer bags using a funnel or the pour spout on your blender and store upright in your freezer overnight. Makes 8 Zipzicles (Nutrition info for 1 Zipzicle).
