A delightfully light and sweet treat, healthy enough to enjoy any time of the day, any season of the year!
Preheat oven to 375°F. In a mixing bowl, mix pumpkin and peanut butter on medium speed until incorporated. Mix in vanilla extract. In a separate bowl, stir together oats, Superfood Protein, cinnamon, cloves, and salt. On low speed, slowly add dry ingredients to pumpkin mixture and mix until completely combined, forming a soft dough.
Drop by rounded tablespoon onto parchment lined baking sheets, about 1 inch apart. Bake cookies approximately 15 minutes, until slightly browned. Cool cookies on sheets for 2 minutes, then transfer to a wire rack to cool completely. Grab a few and enjoy!
