These gluten free pancakes are an excellent way to start the day and your gluten free diet. They are a great source of protein and healthy carbohydrates. Eat them with peanut or almond butter and really amp up the protein you need to build muscle.
Oil an electric griddle lightly with coconut oil and heat it to 375° or oil a frying pan and put it over medium heat. Pour the batter onto the griddle using approximately 1/3 cup for each pancake. When the edges begin to brown and the tops gets bubbly, flip the pancakes over with a spatula and brown them on the other side. Put them on a plate and keep them warm with another plate on top or foil until you’ve used all the batter. Makes approximately 4 medium-sized pancakes.
