Berry Superfood Scramble

What You'll Need

  • 1/4 cup organic quick rolled oats
  • 1 tsp. baking powder
  • 1 serving Pure Vanilla Superfood Protein
  • ¼ cup raspberries, mashed
  • ¼ cup strawberries, mashed
  • ¼ cup organic unsweetened almond milk
  • ¼ tsp. organic coconut oil
  • 2 whole organic eggs (or egg white substitute)
  • ¼ cup organic blueberries

Directions

Combine oats, baking powder, and Pure Vanilla Superfood Protein in a small bowl and stir together. Mix in the mashed raspberries and milk. Heat a medium-sized non-stick pan on medium heat and lightly coat with oil. Pour mixture into pan and stir in eggs with a spatula. Add in fresh blueberries and scramble until eggs are no longer runny. Garnish with a few berries and seize the day!
