Chocolate Fiberlicious Muffins

What You'll Need

  • 1/3 cup egg whites
  • 1 tsp. cinnamon
  • 1 packet all-natural sweetener - organic stevia
  • 4 tbsp. organic ground flaxseed
  • 2 scoops Rich Chocolate Superfood Plant Based Protein
  • 2 tbsp. organic peanut butter, *Laura Scudder
  • 2 tsp. honey
  • organic cooking spray

It only takes a few minutes to prepare this tasty yet healthy, quick and easy breakfast treat. Packed with fiber, protein, and healthy fats, these chocolate muffins require only a few minutes of prep time, are easy to take on the go, and store easily for an afternoon snack. This recipe yields 2 servings – either share the wholesome goodness or save one for later!

Directions:

In a small bowl slightly beat egg whites. Mix in the cinnamon, sweetener, and ground flaxseed. Add the Rich Chocolate Superfood Protein and stir until evenly mixed. Spray microwave-safe baking cup (a coffee cup works perfectly) with organic cooking spray and pour mixture until 2/3 full. Microwave on high heat for ~1 minute, remove from baking cup and let cool. Cover with peanut butter and drizzle with honey.
